Bell Pepper Chutney and Awards

As everyone says, Breakfast is the most important meal of the day..... being a working woman.. I usually dont have enough time to make something special in the morning every day. So mostly we have either Idly or Dosa every alternate week. For these I can prepare the batter on sunday, so that it lasts for me for the whole week.

The other problem that arises is the chutney.... eating peanut or coconut chutney everyday is not that very healthy option. So when I was searching for alternatives on my favourite blogs, I came across this bell pepper chutney in Indira's Mahanandi blog.

It is very healthy, tasty and easy to prepare....

Ingredients:

Red Bell Peppers : 2, chopped
Onion : 1, chopped
Peanuts : 1/2 cup
Dry Red Chillies : 10, adjust accord. to your taste buds
Garlic : 2 cloves
Tamarind paste : 1 tbsp
Salt : to taste
Oil : 1 tbsp

How I did it:
  1. Heat oil in a kadai and add red chillies, bell peppers, garlic and onion and roast till done.
  2. Dry roast peanuts in a seperate pan. (I used already roasted tinned peanuts).
  3. Once the roasted veggies cool, grind all the ingredients to a coarse paste without adding any water.
  4. Serve with any breakfast like, idly or dosa.. even tastes good with hot rice.

And the Verdict:

J liked it very much, it was different from the regular chutneys we have. It has a mild sweet taste from the red peppers and was very yummy.
I served it with Idlies and it was a huge hit.

Colorful Platter of Peppers

I was craving for stuffed Capsicum/Peppers from past one week. And when I saw the peppers here from Cynthia, I could not resist anymore. So here is my version of stuffed peppers!!

Stuffed Bell Peppers


The recipe of Stuffed Peppers varies from person to person. Each one has their own version of stuffing.
These brightly colored bell peppers be it red, green or yellow, are rich source of nutrients!!
Selecting the Bell Peppers: When selecting, peppers should be well shaped and firm. The skin should be unwrinkled and their stems fresh and green.

Rice Stuffed Peppers:

Rice I used for this recipe is the vegetable fried rice, I made for lunch today.

You can use your imagination and stuff them with anything of your choice, be it potatoes, ground meat with veggies or rice.

Ingredients:
Capsicum: 3
Oil: 1 Tbsp
Salt, as per taste
Stuffing: 2 cups cooked vegetable rice, or any stuff of your choice

How I did it:
  1. Cut the top part of the peppers and remove the seeds inside.
  2. Place the peppers in a bowl of water enough to cover them, add salt and boil for 5 minutes.
  3. Remove and fill them with the vegetable rice. Cover them with the lids.
  4. Brush the peppers with oil, from outside and bake in a preheated oven for 10 minutes.
  5. Serve hot.
